Crab Kicker
Since
1986, I have driven the scenic highways that connect tiny fishing
villages along the Louisiana coast. I have met with shrimpers, crabbers,
fishermen and their families. They shared their bounty. I learned from
their ancestry.
The French-speaking people of South Louisiana call the dish you are
about to enjoy "boullets", meaning balls. Shrimp or Crab balls are most
common. These Crab Cake Balls were inspired by Danny Duet and his wife
Poppy who introduced me to this dish at their fishing camp near Galliano,
Louisiana. Minced onion, garlic, crab, celery, special seasonings
and breadcrumbs hand rolled into a ball, make this a wonderful, yet simple
appetizer or party food. Danny also taught me a local-French saying, "C'est
bon touffee"- as good as it gets. I promise you these Crab Cake Balls
and the fishing at Danny's camp are both "C'est bon touffee". |
